DO YOU OVER COMMIT TO PLANS? Specifically during the week? I am SO guilty of this.
I’m sure many of you feel the same way: you go to look at the week ahead only to find you’ve somehow locked yourself into dinners Mon-Fri. Personally, I’m exhausted at the end of the day … I NEED this time to recharge, catch up on work and/or just. literally. CHILL.
I love going out to dinner and being social, but a girls gotta recharge! It’s hard because on one hand, seeing friends in IRL and being social is really important - but on the other hand, saying yes all the time might have you showing up no where near your best self. Here are some non-dinner alternatives so you can still some face time in with friends without having to give up too much of your precious week nights:
.
♥️ MANIS. — You have to do it anyway, and it’s a good chunk of *phone-less* time - why not bring a friend to pass the time!?
♥️ WORKOUT + COFFEE + WALK HOME AFTER. — Bringing a friend to workout is a great way to motivate each other and have fun, but it’s not the best place to catch up! Grab a coffee and walk in the direction of work/home after.
♥️ GROUP FRIENDS TOGETHER. — One on one time is great, but it’s also really fun to set up a group dinner so you can spend time with a bunch of friends at once, instead of spreading them all out over different nights.
♥️ COOK TOGETHER. — A great alternative to a night out. And, you’ll likely have leftovers, which will save you more time later in the week.
♥️ GO TO AN EVENT. — If you get an invite somewhere and don’t want to go solo, invite that friend who would value it specifically - because you most likely have one! (ie. A networking event, etc).
♥️SUNDAY MEAL PREP/BAKING. — who can honestly turn down freshly baked banana chocolate chip muffins? Next time you’re in the mood to bake, invite a friend over to do it with you.

This Sunshine Breakfast Salad is perfect during the summer time!☀️

We highly recommend boiling a whole bunch of eggs, baking a bunch of bacon, and caramelizing a couple of red onions. That way you’ll have the ingredients on hand to make Sunshine salads the rest of the week with virtually zero prep time. Enjoy!😄

SERVES 1

* 1 strip Nitrate free bacon
* 1 Hard Boiled Egg
* 1 teaspoon olive oil
* ¼ cup red onion, sliced
* 2 cups Butter Lettuce, torn
* 2 tablespoons Walnuts
For the Balsamic Dressing
* 2 tablespoons balsamic glaze
* ¼ teaspoon Garlic, minced
* 3 tablespoons olive oil
* dash of sea salt and black pepper

DIRECTIONS
1: Set the oven to 400 degrees F. Line a baking sheet with foil and place the bacon in a single layer. Place in the oven (don’t worry that the oven hasn’t reached 400 yet) and set the timer for 20 minutes. Remove from oven, drain off the grease and chop.
2: Place the egg (or eggs since hard boiled eggs are always great to have in the fridge for on-the-go snacks) in a pot of water. Slowly bring the water to a boil over medium heat. Cover and remove from heat. Leave it for 12 minutes, then run under cool water and peel. Slice the peeled egg.
3:In a small skillet heat the olive oil. Add the sliced onion. Sauté until soft and caramelized.
4: Combine the dressing ingredients in a small bowl.
5: Arrange the butter lettuce over a plate. Add the walnuts, onion, chopped bacon and sliced egg. Serve with a drizzle of the dressing. Enjoy!😋

I can't believe we are half way thru August. It has been a busy, but also a relaxing summer at the same time. My daughter was just here from Oregon for a whole week. I did lots of meal prep before she arrived and one morning while she was here. That is the only cooking I had to do.
We had wonderful breakfasts lunches, and dinners. The whole family went out 2 nights for dinner. Don't forget how much meal prep you can do before guests arrive.
This lunch is the last of the leftovers. Salmon salad, roasted cauliflower, and roasted asparagus with plenty of spices! Yum! .

The other half of my life 🏥 I’m currently undertaking a masters in children’s nursing and right now I’m on my last placement of first year 😬 I’m doing nights this week and it’s killing me. As a morning person I’m used to getting up around six and having an entire day to do stuff. I’ve only managed to make it to the gym twice this week as result but hoping to redeem that next week as I’m only on three day shifts 👌🏼 as much as I love placement and think it’s the best way to learn - after 12 hour shifts it’s hard to tell yourself to go workout or get fresh air, especially when you’re in a city. Gonna have to motivate myself in the end though because it isn’t going to get any easier when I’m actually qualified!

Yes we all know, eat more fruits and vegetables!!! However, instead of just eating more fruits, it should be eating more fruits at peak ripeness, because that’s when we’ll have the best experience.  But unfortunately many of us don’t know how to tell when a fruit is at peak ripeness. I played handball at high level since I'm 13 years old.
I stopped practicing for studies but I missed sport sooo much 😔
So I started fitness two months ago, I gained weight after my stop and I wanted to feel healthy again. 🍃
I never found a model with my size (185cm) and morphology, I'm a curvy 8. So why not become my own model.
